“It’s fascinating to understand the chemistry behind each step in the process and how it affects the spirit. Every week, we examine our agaves and how factors like the altitude of the fields, the maturity of the plants, and the water that feeds them impact the result,” Tinoco says. “Part of experimenting with the profile of the liquid is always looking to create a more exquisite tequila or achieving a unique character for each creation.”
